BUTTERMILK MUFFINS

1 cup Southern Biscuit¨ Self-Rising Flour

1 cup Tenda Bake¨ Self-Rising Corn Meal

1/4 cup melted shortening or bacon drippings

2 Tbls. sugar

2 eggs, well beaten

1 1/2 cups sour milk or buttermilk


1. Preheat oven to 435 degrees. Grease muffin tins.

2. Mix flour with corn meal.

3. Combine bacon fat, sugar and eggs.

4. Add sour milk or buttermilk and combine with dry ingredients. Beat only until smooth.

5. Fill muffin tins 2/3 full. Bake 15 - 20 minutes.


Yield: 12 - 15 servings.
