DRESSING
5 cups cornbread
made from 2 recipes of Tenda Bake¨ Self-Rising White Corn Meal Mix
3 1/2 cups biscuits made from 2 recipes of Southern
Biscuit¨ Self-Rising Flour
1/4 cup dehydrated onion
1/2 cup warm water
1 1/2 cups of finely chopped fresh celery
1 teaspoon black pepper
1 teaspoon parsley flakes
1 teaspoon season-all
1/4 teaspoon poultry seasoning
1 large egg
1/2 cup milk
1/2 cup melted butter
1 - 10 3/4 ounce can of Cream of Chicken Soup
1 1/2 cups of cool water
Optional Ingredients:
1 - 3.66 oz.
can of smoked oysters, finely chopped
1/2 cup of sliced almonds
1/4 cup of crumbled fried bacon
1. Prepare 2 recipes of cornbread using standard cornbread directions
for Tenda Bake¨ Self-Rising White Corn Meal Mix. After the cornbread has
cooled, crumble the cornbread, measure out 5 cups, and set aside for later
use.
2. Prepare 2 recipes of biscuits using standard biscuit directions for
Southern Biscuit¨ Self-Rising Flour. After the biscuits have cooled, crumble
the biscuits, measure out 3 1/2 cups, and add to
the 5 cups of crumbled cornbread. Set aside for later use.
3. Set your oven to 375 degrees.
4. Beat 1 large egg into 1/2 cup of milk. Set aside for later use.
5. Melt 1/2 cup of butter. Set aside for later use.
6. Allow 1/4 cup of dehydrated onions to soak in 1/2 cup warm water. Set
aside for later use.
7. Stir cream of chicken soup into 1 1/2 cups cold
water. Set aside for later use.
8. Transfer the cornbread, biscuits, celery, pepper, parsley, season-all
and poultry seasoning into a large mixing bowl. Stir until well blended.
9. Add onions and any water that was not absorbed while they soaked to
the mixing bowl.
10. Add butter to the mixing bowl.
11. Add the egg/milk mixture to the mixing bowl.
12. Add chicken soup/water mixture to the mixing bowl.
13. Stir until all liquids have been absorbed. For a drier dressing, add
1/2 cup more of crumbled cornbread. For a wetter dressing, using 1/2 cup
less corn bread.
14. For a unique flavor, 1 - 3.66 oz. can of smoked
oysters may be added to the dressing mixture. For a nuttier flavor, add
1/2 cup of sliced almonds. Also, all seasonings may be adjusted to taste.
For a classic Southern flavor, add 1/4 cup of crumbled bacon.
15. Spread the dressing mixture evenly in a greased 13 x 9 x 2 glass baking
dish. Bake at 375o F. for 55 minutes, or until done.
This dressing may be served as a side dish, or may be used as stuffing
for roast turkey or chicken.
