RED VELVET POUND CAKE

3 1/4 cups Southern Biscuit® All-Purpose Flour

3 cups sugar

1/2 cup shortening

2 sticks butter

6 eggs

1/2 tsp. salt

1/2 tsp. baking powder

3/4 cup milk

1 tsp. lemon flavoring

1 tsp. vanilla flavoring

2 - 1 oz. bottles of red food coloring

1 Tbls. cocoa


1. Preheat oven to 325 degrees.

2. Grease and flour tube pan.

3. Cream sugar, butter and shortening together until fluffy.

4. Add eggs one at a time. Mix well after each egg.

5. Sift together: flour, salt and baking powder.

6. Add to creamed mixture and mix well.

7. Combine milk, food coloring, lemon and vanilla flavorings and cocoa together and add to batter.

8. Beat at high speed until mixed will.

9. Pour batter into greased and floured tube pan. Fill to 2/3 full.

10. Bake at 325 degrees for 1 hour to 1 hour and 15 minutes until done.


CREAM CHEESE ICING

1 - 8 oz. pkg. cream cheese

1/2 stick margarine

1 box powdered sugar

1/2 tsp. vanilla flavoring

1/2 cup chopped pecans


1. Cream cheese and margarine need to be at room temperature.

2. Mix together well.

3. Add vanilla flavoring and powdered sugar and mix well.

4. Add chopped pecans and mix gently.
